Olive Oil & Olives from El Olivo

Spain is the world’s leading producer and exporter of olive oil, accounting for around 46% of global production.

Produced in Jaén, Andalusia, Oro Bailén Extra Virgin Olive Oil, available from El Olivo, is made from carefully selected olives and extracted shortly after harvest to preserve its freshness and flavour. The range includes varietals such as Picual and Arbequina, each with its own distinctive aroma and flavour profile.

Also available from El Olivo, La Explanada Anchovy-Stuffed Manzanilla Olives combine Spanish Manzanilla olives with a savoury anchovy filling.

Spain has a long tradition of conservas—seafood preserved at its freshest and carefully packed by hand.

Sourced from the waters around Galicia, Ramón Peña Small Sardines in Olive Oil, available from The Portside Market, are selected for their petite size before being cleaned and individually hand-packed. Preserved in olive oil, the sardinillas have a tender texture and a clean, delicate flavour.

Smoked Bluefin Tuna Belly Carpaccio from EcoLah

Known in Spain as atún rojo for its deep red flesh, bluefin tuna is traditionally divided into different cuts through ronqueo. Among the most prized is the belly, or ventresca, valued for its natural richness and fine marbling.
